This dish is one of our go to dishes for dinner. It's really easy and fast to make. I also love it because it will make quite a bit which is great for next day lunches. Hope you enjoy it!
1 teaspoon olive oil
1 onion, chopped
3 garlic gloves, peeled and chopped
3/4 cup uncooked quinoa
1 1/2 cups of vegetable broth
1 teaspoon ground cumin
1 ear of corn, or 1 cup of frozen corn kernels
4 cups of black beans
1/2 cup of fresh cilantro (optional)
Directions:
1. Heat the oil in a saucepan over medium heat. Cook onion and garlic until lightly brown.
2. Mix in quinoa into the saucepan and cover with vegetable broth. Add cumin, and salt and pepper to taste (option). Bring the mixture to a boil. Cover, and reduce heat and let it simmer for 20 minutes.
3. Stir in corn, black beans and cilantro.

I have never made quinoa but this looks so yummy I may have to jump in and make some. Thanks for healthy food inspiration.
