We love cheese.
And this recipe adds a little bit more nutrition than just the traditional mac and cheese.
So I was pretty happy when I stumbled upon this recipe from here.
Their version looks a lot better than mine. However, I didn't have everything they had in their recipe on hand. So here is my busy mother, what I had on hand version of the recipe.
Ingredients:
Small squash; cut in chunks
Olive Oil
1 Broccoli head
1 Medium Tomato
1 8oz package of noodles
3/4 cup of cheddar cheese
3/4 cup Parmesan cheese
4 Tablespoons sour cream
Basil to taste
1 1/2 cup of bread crumbs
Directions:
Cut Squash in chunks. drizzle chunks with olive oil and some salt. place in the oven at 400 degrees for 20-30 mins.
Chop Brocoli into fine crumbs. Combine with bread crumbs and basil.
Chop up tomato separately set aside.
Combine cheeses in a separate bowl. Add the tomatoes to the mixture
Boil noodles, drain. Save 1 cup of water from the noodles.
When finished mix the noodles, cheeses, tomatoes, squash, water together and put in a casserole dish. It might be a bit runny, but the moisture will be soaked up in the oven.
Top with Broccoli/bread crumb mixture.
Place in oven for 20-30 minutes. And enjoy!
