Sweet Potato Burritos
These are a staple in our house, we eat them a lot and they are so addicting. And what is so great about this recipe is that it makes a lot, and they freeze very well. So, I can stick them in the freezer for another meal or for lunch on the go. Now you can see why they are a staple.

Sweet Potato Burritos:
Ingredients:
1 tsp Olive Oil
1 Onion chopped
4 cloves garlic, minced
3 cans of kidney beans, drained
1 1/2 cup water
1 tablespoons chili powder (or more if you like more spice)
2 teaspoons ground cumin
4 teaspoons mustard
3 tablespoons soy sauce
3 large sweet potatoes cooked and mashed
15 wheat tortillas
Mozzarella cheese (or cheddar)
Directions:
1. Preheat oven to 350 degrees F
2. Heat oil in medium skillet, and saute onion and garlic until soft. Stir in beans and mash. Gradually stir in water, and heat until warm. Remove from hear, and stir in the chili powder, cumin, mustard, and soy sauce.
3. Evenly distribute the bean mixture and mashed sweet potatoes between the warm tortillas. Sprinkle with cheese. Fold up the tortillas and place on a baking sheet.
4. Bake for about 10 minutes in the oven and serve!

I also cook the same 5 meals but I thought of it as the 5 things I'm pretty sure will turn out okay. Now I can view this as my sensible time saving plan - and the first new addition to the traditional five will be the Yam Burritos.
Btw, my five meals are tamale pie casserole, meatloaf, a mild chili, broccoli supreme and a burger/bean bake. For my now grown kids, I still make peanut butter playdo as a fun extra treat.
